Prepare ingredients
Peel the plantains: cut off both ends, make shallow lengthwise slits in the skin and pry the peel away. Slice each plantain into 1–2 inch (2.5–5 cm) pieces. Peel the cassava by cutting off both ends, making a lengthwise slit through the skin and removing the tough brown rind and pinkish layer beneath. Cut cassava into 1–2 inch chunks and remove any fibrous core from each piece.

Boil plantain and cassava
Place the plantain and cassava chunks into a medium pot and add 6 cups of water, or enough to cover them by about 1 inch. Add 1 tsp salt. Bring to a boil over high heat, then reduce to a simmer. Cook until both plantain and cassava are very tender and easily pierced with a fork, about 20–25 minutes.

Drain and reserve cooking liquid
Drain the cooked plantain and cassava in a colander and reserve 1/2 to 1 cup of the cooking liquid in a container — you may need it to adjust fufu consistency.

Mash or pound to a smooth dough
Option A (traditional mortar & pestle): Transfer hot pieces to a large mortar. Using a heavy pestle, pound the plantain and cassava vigorously until you reach a smooth, cohesive, elastic dough without large lumps, about 8–12 minutes. Option B (food processor or stand mixer): Working in batches, transfer hot pieces to a food processor fitted with S‑blade and pulse, then process until a smooth, sticky mass forms. If using a heavy-duty stand mixer with paddle, beat on medium-high until smooth. Add reserved cooking liquid, 1–2 tablespoons at a time, if the mixture is too stiff; stop when the fufu becomes smooth, slightly elastic, and holds together in a ball. Be careful—hot mixture will steam.

Finish and shape
With damp hands, transfer the fufu to a clean bowl. Add 1 tablespoon of unsalted butter or 1 teaspoon palm oil, if using, and knead it in briefly to add sheen and a touch of richness. Divide into 4 equal portions and shape each portion into a smooth ball or mound. Serve immediately with your preferred soup, stew, or sauce.

Storage and reheating
To store, place cooled fufu in an airtight container and refrigerate up to 3 days. To reheat, steam or microwave with a splash of water (cover) until warmed through, then knead briefly to restore elasticity.
