    Prepare and Cook Protein

    Heat a large skillet over medium-high heat and add 1 tablespoon vegetable oil. Add the finely diced onion and cook 2–3 minutes until translucent. Add minced garlic and cook 30 seconds more. Add 1 lb ground beef or ground chicken to the pan, breaking it up with a spatula. Cook until no longer pink (about 6–8 minutes for beef, 8–10 minutes for chicken). Stir in 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp black pepper. Taste and adjust seasoning. Once cooked through and slightly browned, remove from heat and keep warm.

    Cook Fries

    Preheat oven and cook fries according to package directions for extra-crispy results: preheat oven to 425°F (220°C). Spread 1 lb frozen fries in a single layer on a rimmed baking sheet, lightly coat with 1 tsp oil or spray, and bake 18–25 minutes, flipping halfway, until golden and crisp. Alternatively, use an air fryer at 400°F (200°C) for 12–16 minutes, shaking once.

    Prepare Fresh Toppings

    While fries cook, dice 1 cup tomato and 1/2 cup bell pepper. Thinly slice green onions if using. Combine in a small bowl and set aside.

    Assemble Fries and Toppings

    When fries are done, transfer them to an oven-safe platter or leave on the baking sheet. Evenly distribute the cooked protein across the fries. Scatter diced tomatoes and peppers over the top.

    Add Cheese and Melt

    Sprinkle 1 cup shredded cheddar and 1/2 cup shredded Monterey Jack over the fries, protein, and vegetables. Return to the oven (or broil very briefly) for 2–4 minutes just until the cheese is melted and bubbly. Watch closely under broil to prevent burning.

Deluxe Sauce

    Make Deluxe Sauce

    In a small bowl, whisk together 1/2 cup mayonnaise, 2 tbsp ketchup, 1 tbsp yellow mustard, and 2 tbsp sour cream or Greek yogurt. Add 1/2 tsp smoked paprika, 1 tsp hot sauce (optional), 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp lemon juice or vinegar, 1/4 tsp salt, and 1/4 tsp black pepper. Taste and adjust acidity or heat as desired. Refrigerate until ready to serve. The sauce can be drizzled or served on the side.

    Finish and Serve

    Remove the assembled fries with melted cheese from the oven. Drizzle the deluxe sauce evenly over portions (or serve on the side). Garnish with sliced green onions and 2 tbsp chopped cilantro or parsley, if desired. Serve immediately with lime wedges on the side for squeezing.
