Prepare chicken
Rinse the chicken pieces and pat dry thoroughly with paper towels. Trim any excess fat or skin if desired.

Place the chicken in a large bowl or resealable plastic bag.

Add the lime juice (or vinegar) and rub it over the chicken pieces; let sit 5 minutes to start tenderizing.

Massage the marinade into the chicken so all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor. If short on time, marinate for 30–60 minutes at room temperature but not more than 2 hours.

Prepare dredge
In a shallow bowl or pie plate whisk together the all-purpose flour, cornstarch, baking powder, paprika, garlic powder, onion powder, salt and black pepper until uniform.

Remove the chicken from the refrigerator. Let it sit 15 minutes at room temperature to take the chill off (helps even cooking). Pat pieces dry again if they released moisture during marinating — a relatively dry surface helps the coating adhere.

If you prefer a thicker crust, you can lightly dust the chicken with a few tablespoons of the flour mixture, then dip briefly in a little cold water (or beaten egg, optional) and dredge again. This recipe assumes a single-dredge method: press each piece firmly into the flour mixture so it adheres, shaking off excess.

Heat the oil
Pour vegetable oil into a deep heavy pot or Dutch oven to a depth of about 2–2.5 inches (roughly 1 liter for a medium pot). Attach a deep-fry thermometer to the pot and heat the oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, a cube of bread should brown in about 60 seconds when oil is ready.

Fry the chicken in batches to avoid overcrowding. Gently lower pieces into the hot oil skin-side down if skin is present. Cook until golden brown and crispy, about 10–14 minutes per batch for bone-in pieces, turning occasionally for even color. Internal temperature should reach 165°F (74°C) near the bone. Smaller pieces (wings) will cook faster (6–8 minutes).

Use a slotted spoon or spider to transfer the fried chicken to a wire rack set over a baking sheet to drain. Do not stack pieces on paper towels; the rack prevents the crust from steaming and getting soggy. Keep warm in a 200°F (95°C) oven if frying multiple batches.

When all pieces are fried, sprinkle the chopped parsley or cilantro over the chicken and serve with lime wedges. Squeezing lime over each piece brightens the flavors and is traditional with Haitian-style fried chicken.
