Goat Stew
Rice (choose one — base white rice option below; optional variations described in directions)

Goat Stew

Pat goat pieces dry with paper towels and season lightly with 1/2 tsp salt and 1/4 tsp black pepper.

Heat 2 tbs oil in a large heavy pot or Dutch oven over medium-high heat. When hot, brown goat pieces in batches (2–3 minutes per side) without crowding. Transfer browned pieces to a plate.

Reduce heat to medium and add remaining 1 tbs oil. Add chopped onion and sauté 6–8 minutes until softened and beginning to caramelize.

Add minced garlic and ginger; cook 30–45 seconds until fragrant careful not to burn.

Stir in tomato paste and cook 1–2 minutes to remove raw flavor, stirring to coat onions.

Add diced bell peppers and whole or chopped scotch bonnet (if using). Cook 3–4 minutes until peppers begin to soften.

Return browned goat pieces to the pot. Add diced tomatoes and stock. Scrape any browned bits from the bottom of the pot (deglaze).

Stir in bay leaves, dried thyme, ground cumin, paprika, remaining black pepper, and remaining 1 tsp salt. Bring to a gentle simmer.

Cover and reduce heat to low. Simmer for 1.5–2 hours, checking every 30 minutes. If using tougher cuts, simmer up to 2.5 hours, or transfer to a 325°F (160°C) oven for the same time. Add a splash of stock or water if liquid reduces too much. Meat is done when fork-tender and easily pulls apart.

White Rice (base preparation)

Rinse rice in a fine-mesh sieve under cold water until water runs clear to remove excess starch; drain well.

Add the rinsed rice, stir once, return to a gentle boil. Reduce heat to lowest setting, cover tightly, and simmer 15–18 minutes without removing lid.

Turn off heat and let rice rest, covered, for 8–10 minutes. Fluff with a fork before serving.

Seasoned Somali Rice
When bringing water to a boil for the base rice, add whole spice mix (4–6 cardamom pods lightly crushed, 1 small cinnamon stick, 3 cloves, 1 star anise). Proceed with base rice method. Remove whole spices before serving. Optionally stir in 1–2 tbs toasted slivered almonds or raisins before serving.

Djon Djon (Black Rice) Style
If using djon djon powder or concentrated stock, substitute 1/4 cup of the plain water used to cook rice with 1/4 cup djon djon stock/powder reconstituted per package instructions (or simmer dried djon djon in water for 10–15 minutes and strain). Proceed with base rice ratio and method. The rice will take on a dark color and mushroom-savory flavor. Adjust salt as needed.

Jollof-style Rice (tomato and spice)
In a small skillet, heat 1 tbs oil and stir in 3 tbs tomato paste and 1/4 cup onion puree (or finely minced onion). Cook 3–4 minutes, then add 1 tsp cayenne (or to taste) and 1/2 cup water to loosen. Add this tomato mixture to the boiling water before adding rice, then proceed with base rice method. This yields a lightly seasoned Jollof-flavored rice that pairs well with the goat stew.
To Serve

Spoon rice onto plates or a large serving platter. Ladle hot goat stew over or alongside the rice so diners can combine as they like.

Garnish with extra chopped cilantro/parsley and lime wedges. Offer hot sauce on the side for extra heat.
