Plant-based Oysters
Rehydrate TVP
Place 2 cups large-grain textured vegetable protein (TVP) in a bowl. Pour 2 cups hot vegetable broth over the TVP, stir, and let sit 8–10 minutes until fully rehydrated. Drain any excess liquid well by pressing with a spoon or using a fine sieve; reserve up to 2 tablespoons of the soaking liquid for flavor if desired.
Prepare seaweed and mushroom components
If using dried wakame or kombu flakes, reconstitute them in warm water for 5 minutes, drain, squeeze out excess water, and finely chop. Finely shred 2 nori sheets (or crumble). If using king oyster mushroom stems for extra texture, grate or finely chop them and lightly sauté in 1 teaspoon oil for 2–3 minutes until just softened; cool slightly.
Combine oyster mixture
In a large bowl, combine the drained TVP, chopped reconstituted seaweed, shredded nori, sautéed mushroom (if using), 1/2 cup finely chopped shallot, 2 tsp minced garlic, 2 tbsp soy sauce, 1 tbsp lemon juice, 1 tsp vegan oyster sauce or mushroom seasoning (optional), 1 tsp sea salt, and 1/2 tsp black pepper. Mix thoroughly, then taste and adjust seasoning — it should be briny and slightly tangy, resembling oyster umami.
Form oyster shapes
Using clean hands or a small scoop, shape the mixture into 12 flattened oval 'oyster' cakes about 2–3 inches long and 1/2 inch thick. Press each firmly so they hold together. If the mixture seems too loose, add 1–2 tablespoons of breadcrumbs or a small amount of flour to bind; if too dry, add a teaspoon of reserved soaking liquid or plant milk.
Pan-sear (optional step for texture)
Heat 3 tablespoons neutral oil in a large skillet over medium-high heat. Working in batches, sear the formed oysters 1–2 minutes per side just to set and add color, not to fully cook through. Remove to a plate; they will go through the battering and final fry next.
Batter & Breading
Make light batter
In a bowl whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1 tsp baking powder, and 1/2 tsp salt. Slowly whisk in 3/4 cup cold sparkling water and 1/4 cup unsweetened soy milk until a smooth, slightly thick but still fluid batter forms. Chill the batter in the fridge for 5–10 minutes if time allows — cold batter gives extra crispness.
Prepare breading station
Place panko breadcrumbs mixed with 2 tsp finely ground sesame seeds in a shallow dish. Have the batter in a wide bowl and the seared oyster cakes on a plate. For better adhesion, you can dust each cake lightly with 1–2 teaspoons of extra flour (not included separately) before dipping in batter.
Working one at a time, lightly dust a formed oyster with flour (optional), dip into the chilled batter letting excess drip off, then press into the panko mixture to coat thoroughly. Place on a baking sheet lined with parchment. Repeat for all oysters. For extra crunch, double-dip: after the first panko coat, briefly return to the batter and re-coat with panko.
Fry until golden
Heat 1/4 inch (about 1/2 cup) of neutral oil in a wide skillet over medium-high heat (or preheat a deep fryer to 350°F / 175°C). Fry battered oysters in batches, 2–3 minutes per side, until golden brown and crispy. Adjust heat as needed to avoid burning. Transfer to a wire rack or paper towels to drain. If you seared earlier, this final fry is primarily to crisp and finish cooking; if you skipped searing, fry a little longer (3–4 minutes per side) and ensure internal temperature/texture is heated through.
Finish with seasoning
While still hot, lightly sprinkle the fried oysters with a pinch of sea salt or a mix of seaweed powder and salt for extra ocean flavor.
Tartar-style Dipping Sauce
In a small bowl combine 1/2 cup vegan mayonnaise, 2 tbsp finely diced dill pickles, 1 tsp chopped capers, 1 tsp fresh lemon juice, 1 tsp finely chopped fresh dill or parsley, 1/2 tsp seaweed powder or finely crumbled nori, and 1/4 tsp black pepper. Stir until smooth. Taste and adjust acidity or salt — add a pinch of sugar if desired to balance. Chill until ready to serve.
