Prepare Base & Aromatics

Prep aromatics

Peel and finely dice the onion and mince the garlic. If using fresh carrots or celery, dice them to roughly 1/4-inch pieces. Chop the fresh herbs and set aside.

Sweat aromatics

In a large pot or Dutch oven, heat 2 tbsp olive oil or butter over medium heat until shimmering. Add the diced onion and a pinch of salt. Cook, stirring occasionally, until the onion is translucent, 4–6 minutes. Add the minced garlic and cook 30–60 seconds until fragrant, taking care not to brown.

Combine Soup and Add-ins

Add prepared soup

Pour 6 cups of your prepared soup into the pot with the softened aromatics. Stir to combine and bring to a gentle simmer over medium-low heat.

Add vegetables and proteins

If you're using diced carrots, celery, peas, corn, or cooked proteins, add them now. For raw carrots/celery, simmer until tender (about 10–12 minutes). Frozen peas or corn will heat through in 3–5 minutes. If adding cooked chicken or beans, stir them in and warm through for 3–5 minutes.

Season

Taste the soup and add up to 1 tsp each of salt and black pepper as needed. Add 2 tbsp fresh lemon juice to brighten flavors, then taste again and adjust seasoning.

Make slurry (if thicker soup desired)

If you want a thicker body, whisk 1 tbsp cornstarch into 2 tbsp cold water until smooth to make a slurry. Slowly whisk the slurry into the simmering soup, allow to return to a gentle simmer, and cook 2–3 minutes until the soup thickens and the starch cooks out.

Enrich soup

Stir in 1 cup heavy cream or coconut milk for a creamier texture, and cook 2–3 minutes to warm. If using grated Parmesan, whisk in 1/2 cup now until melted and integrated.

Final Adjustments & Serve

Finish with herbs and adjust

Stir in the chopped fresh herbs (about 1 cup) off the heat to preserve brightness. Taste and adjust salt, pepper, or lemon juice. If you like heat, add up to 1 tsp chili flakes or a splash of hot sauce.

Ladle soup into bowls for 6 people (approximately 1 cup per serving plus any additional sides). Top each bowl with croutons or toasted bread, a sprinkle of extra chopped herbs, and freshly ground black pepper. Serve immediately.
