Prep aromatics and vegetables

Peel and thinly slice the ginger. Mince the garlic. Julienne the carrot or cut into thin rounds. Slice the mushrooms. Trim and halve the snow peas. Chop the bok choy or Napa cabbage into bite-sized pieces. Slice the scallions, keeping whites and greens separate. If using tofu, press it for 15–20 minutes, then cut into 1/2-inch cubes.

Soak the bean thread noodles: place the dried bean threads in a large bowl and cover with warm water. Let soak 5–8 minutes until pliable but not fully soft (they will finish cooking in the hot broth). Drain and set aside.

Make the Broth

In a large pot or Dutch oven, heat 1 teaspoon sesame oil over medium heat. Add the ginger slices and garlic; sauté 30–45 seconds until fragrant but not browned to release aromatics.

Pour in the 6 cups vegetable broth and 1 cup water. Stir in 1.5 tablespoons soy sauce and 1 teaspoon rice vinegar. Bring the liquid to a gentle simmer over medium-high heat.

Once simmering, reduce heat to medium-low and let the broth simmer gently for 6–8 minutes to infuse with ginger and garlic. Taste and adjust seasoning with additional soy sauce or a pinch of salt if needed.

Cook Vegetables & Protein

Add carrots, mushrooms, and the whites of the scallions to the simmering broth. Cook for 3–4 minutes until carrots begin to soften and mushrooms release their juices.

Stir in snow peas and chopped bok choy (or Napa cabbage) and cook 1–2 minutes more until bright and just tender-crisp. If using firm tofu, gently add the cubed tofu now and simmer 2–3 minutes to heat through. If using cooked shredded chicken, add it at this stage to warm through.

If using fresh spinach, stir it in now and allow it to wilt, about 30–45 seconds.

Assemble with Bean Threads

Turn off the heat or reduce to the lowest setting. Add the drained bean thread noodles to the pot and gently mix them into the hot broth and vegetables. Let them sit in the hot liquid for 2–4 minutes until fully softened and translucent. Because bean threads continue absorbing liquid, avoid overcooking to prevent mushiness.

Taste the soup and adjust seasoning with additional soy sauce, a squeeze of lime, or a pinch of red pepper flakes for heat.

Serve & Finish

Ladle the soup into bowls, making sure each bowl gets a mix of broth, vegetables, protein, and bean threads.

Garnish with the sliced scallion greens, chopped cilantro (if using), and serve with lime wedges on the side. Offer extra soy sauce or red pepper flakes at the table.

Serve immediately. Leftovers: store components refrigerated in an airtight container for up to 3 days; refrigerate bean threads separately if possible and add fresh when reheating to avoid them soaking up too much broth.
