Prepare and brown the sausage

Pat the sausage links dry with paper towel. On a cutting board, slice the links on the diagonal into 1/3–1/2-inch thick slices. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once shimmering, add the sausage slices in a single layer (work in two batches if needed). Let the slices sear undisturbed for 2–3 minutes until golden-brown on one side, then flip and brown the other side, about 1–2 more minutes. Transfer browned slices to a plate and set aside.

Sauté garlic and build flavor

Lower heat to medium and add the remaining 1 tablespoon olive oil to the same skillet. Add the garlic and red pepper flakes and sauté briefly, about 30–45 seconds, until fragrant and just beginning to turn golden (do not burn). Stir in the torn basil leaves and cook 10–15 seconds to release aroma.

Deglaze and combine with marinara

Pour the white wine into the skillet to deglaze, scraping up any browned bits from the pan with a wooden spoon; let the wine reduce for 1 minute. Add the marinara sauce and optional stock, stir to combine, and bring to a gentle simmer. Taste and season with salt and black pepper. Simmer uncovered for 3–5 minutes to meld flavors and thicken slightly.

Finish cooking sausage in sauce

Return the browned sausage slices to the skillet, nestling them into the sauce. Simmer gently for 4–6 minutes until the sausage is heated through and the sauce clings to the slices.

Taste and adjust seasoning. Sprinkle grated Parmesan and chopped parsley over the sausage and sauce. Serve hot in the skillet or transfer to a serving dish, accompanied by crusty bread or crostini for dipping.
