Prepare ingredients

Measure out all vinaigrette ingredients: 3/4 cup olive oil, 1/4 cup red wine vinegar, 1 tablespoon Dijon mustard, 1 teaspoon honey, 1 clove garlic minced, 1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper.

Emulsify

In a medium bowl or a jar with a tight-fitting lid, add the vinegar, Dijon mustard, honey, minced garlic, salt and pepper. Whisk briefly (or secure lid) to combine.

Add oil slowly

If using a bowl, slowly drizzle the olive oil into the vinegar mixture while whisking vigorously to create an emulsion. If using a jar, add the olive oil, secure the lid and shake vigorously for 20–30 seconds until the dressing is well combined and slightly thickened.

Taste and adjust

Taste the dressing and adjust seasoning to preference: add more salt, pepper, honey for sweetness, or an extra teaspoon of vinegar if you want it tangier. Let sit 5–10 minutes to allow flavors to meld before serving. Store in the refrigerator up to 1 week; bring to room temperature and shake before use.

Creamy Herb Dressing (alternative)

Combine base

In a bowl, whisk together 1/2 cup Greek yogurt and 1/4 cup mayonnaise until smooth.

Add flavorings

Stir in 1 tablespoon fresh lemon juice, 1 teaspoon olive oil, 1 teaspoon chopped dill, 1 teaspoon chopped parsley, 1/4 teaspoon garlic powder, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Mix until evenly distributed.

Thin to desired consistency

If the dressing is too thick, add cold water 1 teaspoon at a time (up to 2 tbs) and stir until you reach the desired pourable consistency.

Chill and serve

Refrigerate for at least 15–30 minutes to let herbs and lemon meld. Store in an airtight container up to 5 days. Stir or shake before serving.

Mix ingredients

In a small bowl, combine 2 teaspoons Dijon mustard, 1 teaspoon honey, and 1 teaspoon apple cider vinegar. Whisk until smooth.

Add oil and season

Slowly whisk in 2 tablespoons olive oil until a cohesive dressing forms. Season with 1/8 teaspoon salt and 1/8 teaspoon black pepper; taste and adjust.

Serve or store

Use immediately or refrigerate up to 1 week. Shake or whisk briefly before using if separation occurs.
