Preparing the Chocolate Mousse Base
Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a saucepan of simmering water to create a double boiler. Stir occasionally until fully melted and smooth. Remove from heat and let it cool slightly.
Whisk the Eggs
In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy, about 5 minutes.
Combine Chocolate and Eggs
Gradually fold the melted chocolate into the egg mixture until well combined. Be careful not to deflate the mixture.
Whip the Cream
In another bowl, whip the heavy cream, vanilla extract, and a pinch of salt until soft peaks form.
Fold in the Cream
Gently fold the whipped cream into the chocolate and egg mixture in three batches until no white streaks remain. This will keep the mousse light and airy.
Chilling and Serving
Chill the Mousse
Spoon the mousse into individual serving dishes or glasses and refrigerate for at least 2 hours or until set.
Garnish the Mousse
Before serving, top with chocolate shavings or a dusting of cocoa powder. Optionally, add fresh berries and mint leaves for added flavor and decoration.
