prep bones

Preheat oven to 450°F (230°C). Rinse bones under cold water and pat dry with paper towels. If bones are not already split, ask your butcher to split them lengthwise or cross‑cut so marrow is exposed. Place bones marrow‑side up on a rimmed baking sheet lined with foil for easy cleanup.

season and roast

Sprinkle each exposed marrow with a light pinch of kosher salt and a small grind of black pepper. Roast in the preheated oven for 12–18 minutes, until marrow is bubbling at the edges and slightly caramelized but not completely melted away. Check at 12 minutes and continue if needed. Remove from oven and let rest 2 minutes.

While marrow roasts, pat oysters dry and set aside on a small plate. If you prefer oysters just warmed, place them on the baking sheet during the last 2–3 minutes of bone roasting to take the chill without overcooking. Otherwise serve them chilled on the side.

In a small bowl combine softened butter, grated pepper‑jack, minced shallot, chopped parsley, lemon zest, hot sauce (if using) and 1/4 tsp salt. Mix thoroughly until smooth and evenly combined. Taste and adjust salt or hot sauce. Refrigerate briefly if it becomes too soft, or form into a small log using plastic wrap.

After bones come from the oven, place about 1 Tbs pepper‑jack butter onto each hot marrow cavity; the butter will melt into the marrow, creating a spicy, creamy topping. Return to oven for 1–2 minutes if you want the butter fully melted and slightly browned.

Conecuh jam (sweet‑savory relish)

In a small skillet set over medium heat, add the diced Conecuh sausage and cook 2–3 minutes until it releases some fat and begins to brown. Add minced shallot and cook 30–45 seconds until fragrant. Stir in brown sugar, apple cider vinegar, maple syrup and Dijon mustard. Reduce heat to low and simmer gently, stirring, until mixture becomes glossy and slightly syrupy, about 3–5 minutes. If it becomes too thick, add up to 1 Tbs water. Finish with 1/4 tsp freshly ground black pepper and taste; adjust seasoning. Remove from heat and keep warm.

assemble jam on marrow

Spoon about 1 Tbs of the Conecuh jam onto each marrow after the pepper‑jack butter has been added (or alongside, if preferred). The jam provides a sweet‑savory counterpoint to the rich marrow.

To serve

Toast baguette slices: Brush slices lightly with oil or butter and toast under broiler or in a skillet until golden and crisp. Serve 2 slices per bone for spreading marrow.

plate and garnish: Place roasted bones on a platter. Top each marrow with the pepper‑jack butter and a spoonful of Conecuh jam. Arrange oysters alongside (warmed or chilled). Garnish with microgreens or chopped parsley and serve with lemon wedges and toasted bread. Provide small spoons or a marrow knife for scraping marrow onto bread.

serve immediately: Encourage guests to squeeze a little lemon on oysters (if desired) and to spread marrow + jam on the toast. Roasted marrow is best served hot.
