Prepare glass (optional salted rim)

If you prefer a salted rim, run a lime wedge around the outer rim of a highball or Collins glass, then dip the rim into a small plate of coarse salt to coat. Fill the glass with ice cubes and set aside.

Add tequila and lime

Pour 2 oz blanco tequila into the prepared glass over the ice. Squeeze about 0.5 oz (half a fresh lime, roughly) of fresh lime juice into the glass. If you like a more pronounced lime flavor, add up to 0.75 oz.

Top with Topo Chico

Gently top the tequila and lime with approximately 4 oz (about half a 8 oz bottle or to taste) of chilled Topo Chico sparkling mineral water. Pour slowly to preserve carbonation.

Stir gently

Using a long bar spoon or stirrer, stir gently one to two times to combine the lime and tequila with the mineral water without flattening the bubbles.

Garnish and serve

Garnish with a lime wedge or wheel on the rim. Serve immediately while chilled and effervescent.
