Measure 1 tablespoon of elderflower cordial or syrup. If using a concentrated cordial, taste and adjust to preference; some cordials are sweeter and may require slightly less.

Prepare glass

Choose a large wine glass or stemmed balloon glass. Fill it about two-thirds full with ice (roughly 1 cup). Adding plenty of ice keeps the spritz cold and prevents quick dilution.

Muddle mint

Gently slap the mint leaves between your palms to release aroma, then add the mint to the glass on top of the ice. Lightly muddle with the back of a spoon (2–3 gentle presses) to release oils — avoid over-muddling to prevent bitterness.

Add elderflower and lime

Pour the measured 1 tablespoon elderflower cordial over the ice and mint. Squeeze in 0.5 oz (about half a lime) of fresh lime juice. Stir gently 3–4 times to combine the flavors with the syrup.

Add Prosecco and soda

Slowly pour 4 oz chilled Prosecco into the glass to preserve carbonation. Top with 2 oz chilled club soda or sparkling water. Stir very gently once to integrate — avoid stirring vigorously so you don't lose the bubbles.

Garnish and serve

Float a lime wheel or wedge on top and tuck a sprig of fresh mint into the glass for aroma. Serve immediately with a straw or cocktail pick.

Notes: This recipe makes one Hugo Spritz. Adjust sweetness by varying elderflower cordial between 0.5–1.5 tbsp depending on the cordial's sweetness. For a nonalcoholic version, replace Prosecco with chilled nonalcoholic sparkling wine or extra sparkling water.
