Method
Fried Green Tomatoes
Prepare tomatoes
Slice the green tomatoes into 1/3-inch thick rounds (about 3–4 slices per tomato). Pat slices dry on paper towels to remove excess moisture; this helps the coating adhere.
Set dredging stations
In one shallow bowl combine the flour, 1/2 tsp salt, 1/2 tsp black pepper, and 1/8 tsp cayenne. In a second bowl whisk the buttermilk with the eggs until smooth. In a third shallow bowl combine cornmeal, remaining 1/2 tsp salt, remaining 1/2 tsp black pepper, and remaining 1/8 tsp cayenne. (This gives seasoned flour and cornmeal.)
Dredge and coat
Working in batches, dredge each tomato slice in the seasoned flour, shaking off excess; dip into the buttermilk-egg mixture, letting excess drip off; then press into the cornmeal mixture to coat both sides. Place on a wire rack while heating oil. Repeat until all slices are coated.
Fry
Pour vegetable oil into a heavy skillet (cast-iron preferred) to a depth of about 1/3 inch and heat over medium-high until oil registers 350°F (175°C) or a breadcrumb sizzles immediately. Fry the coated tomato slices 2–3 minutes per side until golden brown and crisp. Do not overcrowd the pan; work in batches. Transfer to a paper-towel-lined sheet pan and season lightly with salt while hot.
Marinated Gulf Blue Crab
While tomatoes rest, gently combine the crab meat, olive oil, lemon juice, minced shallot, chopped parsley, hot sauce, 1/4 tsp sea salt, and 1/4 tsp black pepper in a bowl. Toss carefully to avoid breaking lumps. Cover and refrigerate for at least 15 minutes (up to 1 hour) to allow flavors to marry. Keep chilled until assembly.
Pimento Cheese
In a medium bowl, beat the softened cream cheese until smooth. Stir in grated cheddar, mayonnaise, chopped pimentos, hot sauce, smoked paprika, 1/4 tsp kosher salt, and 1/8 tsp black pepper until fully combined and slightly fluffy. Taste and adjust seasoning. Refrigerate until ready to use; if too firm, let sit 10 minutes at room temperature to spread easily.
Creole Remoulade
Whisk together mayonnaise, Creole mustard, Dijon, chopped capers, chopped cornichon, Worcestershire sauce, hot sauce, paprika, lemon juice, minced garlic, chopped parsley, 1/4 tsp kosher salt and 1/8 tsp black pepper until smooth. Chill at least 15 minutes to meld flavors.
Assembly & Garnish
To assemble, spread about 1 to 1 1/2 tablespoons of pimento cheese on each warm fried green tomato slice. Top with approximately 1 to 2 tablespoons of marinated crab meat, letting some chunks remain intact. Drizzle about 1 teaspoon of creole remoulade over the crab (or serve remoulade on the side). Garnish with a few microgreens or baby arugula and a light squeeze of lemon. Serve immediately while tomatoes are hot and crisp.
Serve suggestion: Plate 8 assembled slices for 4 people as an appetizer (2 each) or make larger stacks for 2–3 as a shared starter.
