Prepare the Fish

Preheat your oven to 400°F (200°C). Rinse the branzino under cold water and pat it dry with paper towels. Place the fish on a cutting board and make three diagonal slashes on each side of the fish.

Season the Fish

Rub the fish inside and out with olive oil, salt, and black pepper. Stuff the cavity of the fish with lemon slices, chopped parsley, minced garlic, and thyme sprigs.

Prepare the Vegetables

In a bowl, toss the cherry tomatoes with a drizzle of olive oil and a pinch of salt and pepper.

Bake the Fish

Place the fish on a baking sheet lined with parchment paper. Surround the fish with the seasoned cherry tomatoes. Bake for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

Remove the fish from the oven and let it rest for a few minutes. Serve the branzino with the roasted cherry tomatoes and additional lemon wedges on the side.
