Toast base

Method

Toast base

1

Preheat and prepare bread

Brush both sides of the sourdough slices lightly with olive oil (or spread butter if using).

2

Toast the slices in a skillet over medium-high heat (2–3 minutes per side) until golden and crisp, or toast under a broiler or in a toaster until desired doneness. Keep warm.

Whipped avocado spread

3

Prepare avocado

Cut the avocado in half, remove the pit, and scoop the flesh into a small food processor or a bowl for hand-whisking.

4

Add Greek yogurt (or sour cream), lemon juice, olive oil, kosher salt, black pepper and red pepper flakes (if using).

5

Pulse in the food processor 6–8 times until smooth and creamy but still slightly fluffy. If using a bowl, mash vigorously with a fork or small whisk until fully combined and airy. Taste and adjust seasoning (add more lemon or salt if needed).

6

Transfer the whipped avocado to a small bowl and set aside at room temperature while you finish other components.

Hard boiled eggs

7

Cook eggs

Place the eggs in a small saucepan and cover with cold water by about 1 inch. Bring to a gentle boil over medium-high heat.

8

Once the water reaches a rolling boil, turn off the heat and cover the pan. Let the eggs sit in the hot water for 9 minutes for firm-yet-creamy yolks. (For fully firm yolks, let sit 11 minutes.)

9

Drain hot water and immediately transfer eggs to an ice bath for 5 minutes to stop cooking. Peel and slice each egg in half lengthwise or into rounds, depending on preference.

Assembly — toppings

10

Spread a generous layer (about 2–3 tbs) of the whipped avocado evenly over each warm toasted slice.

11

Fan or loosely arrange half of the smoked salmon on each toast (about 40 g per slice).

12

Place the halved or sliced hard-boiled egg(s) on top of the salmon: either one halved egg per toast or split both eggs across the two toasts as preferred.

13

Scatter the thinly sliced red onion and capers evenly over both toasts.

14

Finish with a few dill sprigs, a crack of freshly ground black pepper, and a pinch of sea salt flakes if desired.

15

Serve immediately while toast is still slightly warm so the avocado spread stays creamy.
