Prepare roux
In a large heavy-bottomed Dutch oven or pot set over medium heat, add the oil and warm until it shimmers. Slowly whisk in the flour to form a smooth paste. Reduce heat to medium-low and cook, stirring constantly with a wooden spoon or heatproof spatula, until the roux reaches a deep chocolate-brown color, about 25–35 minutes. Be patient and keep stirring to prevent burning; scrape the bottom and sides as needed.

When the roux is a deep brown (similar to dark chocolate), immediately add the diced onion, bell pepper, and celery (the "holy trinity"). The roux will bubble and loosen. Stir and cook until the vegetables are softened and translucent, about 6–8 minutes.

Add liquids and chicken: Gradually stir in the chicken stock into the roux-vegetable mixture, whisking or stirring vigorously to incorporate and deglaze the bottom of the pot. Scrape up any browned bits. Add the bay leaves and thyme sprigs. Add the bone-in chicken thighs to the pot, submerging them in the liquid. Add Worcestershire sauce, Creole/Cajun seasoning, hot sauce (if using), salt, and pepper.

Simmer: Bring the gumbo to a gentle simmer (do not boil vigorously). Partially cover and simmer for 30–40 minutes, or until the chicken is cooked through and tender. Skim any excess fat or foam from the surface occasionally.

Remove chicken: Transfer the chicken thighs to a cutting board. Remove and discard thyme sprigs and bay leaves. When slightly cool, remove bones and skin, then shred or chop the meat into bite-sized pieces. Return shredded chicken to the pot along with the reserved andouille slices.

Add tomatoes and okra: Stir in the diced tomatoes (with their juices if canned) and the sliced okra. Continue to simmer, uncovered, for an additional 10–15 minutes to meld flavors and thicken slightly. Taste and adjust seasoning with more salt, Creole seasoning, or hot sauce as desired.

Finish and thicken (optional): If you want a slightly thicker gumbo, sprinkle the file powder into the pot a little at a time while stirring; remove from heat and let sit for 5 minutes (file will thicken as it cools). Note: Do not boil after adding file or it can become stringy.

Add fresh herbs: Stir in chopped parsley and sliced green onions just before serving to add brightness.

Serve: Spoon cooked white rice into bowls and ladle gumbo over the rice. Garnish with extra green onions, parsley, and lemon wedges on the side. Offer additional hot sauce at the table.
