Method
Pasta
- 1
Boil pasta
Bring a large pot of water to a rolling boil. Add 1 tablespoon salt. Add 8 oz angel hair pasta and cook until just al dente, 2–3 minutes (check package). Reserve 1 cup pasta cooking water, then drain the pasta and set aside.
Shrimp & Seasoning
- 2
Season shrimp
Pat 1 lb shrimp dry with paper towels. In a bowl, toss shrimp with 1 tsp kosher salt, 1 tsp freshly ground black pepper, and 1 tsp red pepper flakes so they are evenly coated.
Sauce
- 3
Sear shrimp
In a large skillet over medium-high heat, add 1 tablespoon olive oil and 2 tablespoons butter. When shimmering, add shrimp in a single layer (work in two batches if necessary). Cook 1–2 minutes per side until opaque and just cooked through. Transfer shrimp to a plate and set aside.
- 4
Make sauce
Reduce heat to medium. Add remaining 4 tablespoons butter to the skillet. Add 3 minced garlic cloves and 1 tsp red pepper flakes; sauté 30–45 seconds until fragrant (do not let garlic brown). Pour in 3 fl oz dry white wine and bring to a simmer, scraping up any browned bits from the pan. Simmer 1–2 minutes to reduce slightly.
- 5
Finish sauce
Stir in 2 tablespoons fresh lemon juice and 1 cup reserved pasta cooking water. Bring to a gentle simmer and cook 1–2 minutes to meld flavors and slightly thicken. Taste and adjust seasoning with additional salt and pepper if needed.
Combine & Finish
- 6
Toss pasta and shrimp in sauce
Return the cooked shrimp to the skillet along with drained angel hair pasta. Toss gently to coat the pasta and shrimp in the sauce; if sauce seems thin, simmer 30–60 seconds or add a bit more reserved pasta water to reach desired consistency. Stir in 2 tablespoons chopped fresh parsley and 1 tablespoon grated Parmesan (optional).
- 7
Serve
Divide between plates, garnish with additional parsley and lemon wedges. Offer extra red pepper flakes at the table. Serve immediately.
