Mini Box (makes 1 individual serving)
Method
Assembly
- 1
Prepare salad base
Place 1 cup of mixed salad greens into a small shallow box or individual serving bowl, making a loose even bed for the other components.
- 2
Dress the salad
In a small bowl or measuring cup, whisk together 1 teaspoon olive oil, 1/2 teaspoon balsamic vinegar, a squeeze of the lemon wedge, 1/8 teaspoon salt and a pinch (about 1/16 teaspoon) black pepper. Drizzle the dressing lightly over the salad greens and toss gently to coat.
- 3
Arrange vegetables
Scatter the halved cherry tomatoes (6 halves) and 1/4 cup thin cucumber slices over the dressed greens, distributing them evenly.
- 4
Add protein and cheese
Top the salad with 2 ounces shredded chicken, arranging it so the portion is balanced. Sprinkle or place 1 ounce of shredded or cubed cheddar cheese alongside the chicken.
- 5
- 6
Finish with fruit
If using grapes, tuck 6 grapes into an empty corner of the box for sweetness and color.
- 7
Final touch
Garnish with the remaining lemon wedge on the side for optional extra acidity. If transporting, pack the dressing separately or keep the box sealed until ready to eat.
