Prepare the Elk Patties

In a mixing bowl, combine the elk ground meat, salt, and black pepper. Form the mixture into 6 oz patties.

Caramelize the Onions

In a skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15-20 minutes.

Cook the Elk Patties

Heat a grill or skillet over medium-high heat. Cook the elk patties for about 4-5 minutes on each side or until they reach your desired doneness.

Prepare the Peppercorn Demi

In the same skillet used for the onions, add the red wine and beef stock. Bring to a boil, and then reduce to a simmer. Stir in the demi-glace and cook until slightly thickened, about 5-7 minutes.

Assemble the Burgers

Place the cooked elk patty on the bottom half of the burger bun. Top with caramelized onions, peppercorn demi, and bleu cheese crumbles. Add a lettuce leaf and place the top half of the bun on.
