    Cut cheese

    Cut the mozzarella block into sticks about 3/4 inch to 1 inch thick and 3 to 3 1/2 inches long. Aim for uniform pieces so they cook evenly. Pat dry each stick with paper towels to remove surface moisture — this helps reduce leaking cheese during frying.

    Arrange the sticks in a single layer on a baking sheet and freeze for at least 30 minutes (up to 2 hours). Freezing firms the cheese so the breading adheres and the cheese holds shape when fried.

    Prepare dry mixes

    In a shallow bowl or plate, place the all-purpose flour and season it lightly with 1/4 tsp of the salt and a pinch of pepper. In a second shallow bowl, combine the breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, onion powder, remaining 3/4 tsp salt, and 1/4 tsp black pepper; mix thoroughly.

    Prepare egg wash

    In a third shallow bowl, whisk together the 3 large eggs and 3 tablespoons milk until smooth and slightly frothy.

    First coat

    Working with a few frozen mozzarella sticks at a time, dredge each stick in the seasoned flour, shaking off excess. Then dip into the egg wash, allowing excess to drip back into the bowl. Finally press the stick into the breadcrumb mixture, turning to coat all sides and pressing gently so the crumbs adhere.

    For best results and to minimize cheese leakage, place the coated sticks on a tray and return to the freezer for 10–15 minutes. After they firm up, repeat the egg wash and breadcrumb step (dip in egg again, then press in breadcrumbs) for a thicker, sturdier coating. Freeze for another 15–20 minutes before frying.

Frying

    Heat oil

    Pour oil into a heavy-bottomed pot or Dutch oven to a depth of about 2 inches (roughly 2–3 cups depending on pot size). Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle and brown in about 30–45 seconds.

    Fry in batches

    Carefully lower 4–6 frozen, breaded sticks into the hot oil, avoiding overcrowding. Fry for about 1 minute to 1 minute 30 seconds, turning occasionally with tongs, until the coating is golden brown. Do not overcook — mozzarella melts quickly once the coating is hot. If the oil temperature drops below 320°F, allow it to recover between batches.

    Drain

    Using a slotted spoon or tongs, transfer fried sticks to a wire rack set over a baking sheet or to paper towels to drain. Sprinkle lightly with kosher salt while still hot. Keep finished batches in a warm oven (200°F / 95°C) on the rack if making multiple batches so they stay crisp.

Sauce (Marinara)

    Warm the marinara sauce in a small saucepan over low heat until simmering gently, about 5–7 minutes. Taste and adjust seasoning if necessary. If using, tear basil leaves and stir into the sauce just before serving.

Finishing & Serving

    Serve the mozzarella sticks immediately, sprinkled with optional grated Parmesan. Provide warm marinara on the side for dipping. For best texture, eat right away; leftovers can be reheated in a 400°F (200°C) oven for 6–8 minutes to re-crisp.
