Caramelize the Onions

Heat 1 tablespoon of olive oil in a skillet over medium heat. Slice the onion thinly and add it to the skillet. Cook, stirring frequently, until the onions are golden brown and caramelized, about 15-20 minutes. Season with salt and pepper to taste.

Grill the Tomatoes

Slice the roma tomatoes in half and brush with a little olive oil. Grill them cut-side down on a grill or grill pan over medium-high heat until they are slightly charred and softened, about 4-5 minutes. Set aside.

Cook the Salmon

In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Season the salmon filet with salt and pepper. Place the salmon in the skillet and cook for about 4-5 minutes per side, or until it is cooked through and flakes easily with a fork.

Assemble the Sandwich

Toast the bread slices if desired. On one slice of bread, layer the caramelized onions, grilled tomatoes, and fresh romaine lettuce. Top with the cooked salmon filet and finish with the second slice of bread.

Cut the sandwich in half if desired and serve immediately.
