Preparation

1. Make the Custard

In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

2. Prepare the Brioche

Place the brioche slices in a baking dish. Pour the custard mixture evenly over the brioche, ensuring each slice is well soaked. Let it sit for about 10 minutes to absorb the custard.

Baking and Caramelization

1. Bake the Brioche

Preheat your oven to 350°F (175°C). Bake the soaked brioche in the oven for 15 minutes.

2. Prepare for Caramelization

While the brioche is baking, melt the unsalted butter and brown sugar in a small saucepan over medium heat until the mixture forms a smooth caramel.

3. Caramelize

After 15 minutes of baking, remove the brioche from the oven and drizzle the caramel mixture over the top. Return to the oven and bake for an additional 5 minutes until the top is golden and caramelized.

Serving

1. Serve

Allow to cool for a few minutes before slicing. Serve warm, optionally topped with whipped cream or fresh fruit.
