Prepare vegetables and bread

Dice the tomato, removing seeds if desired to reduce moisture. Finely dice the onion. Seed and finely chop the green chili (wear gloves if preferred). Chop cilantro if using. Slice the french bread into serving pieces or halve lengthwise and set aside.

Crack the eggs into a medium bowl, add the milk, salt and pepper, and whisk thoroughly until blended and slightly frothy (about 20–30 seconds).

Cook vegetables

Heat a nonstick or well-seasoned skillet over medium heat. Add the butter (or oil) and let it melt and foam but not brown (about 30 seconds).

Add the diced onion and sauté for 2–3 minutes, stirring occasionally, until softened and translucent.

Add the chopped green chili and continue to cook 30–60 seconds to bloom the pepper's flavor.

Add the diced tomato and cook another 1–2 minutes just to warm through and release some juices. If tomatoes are very wet, cook a little longer to evaporate excess moisture so scrambled eggs won't become watery. Season the vegetable mix lightly with a pinch of salt (about 1/8 tsp).

Scramble eggs

Reduce heat to medium-low. Pour the whisked egg mixture over the warm vegetable mixture in the skillet. Let the eggs sit undisturbed for 10–15 seconds until they just begin to set at the edges.

Using a heatproof spatula, gently push the eggs from the edges toward the center, creating large soft curds. Continue to fold and move the eggs every 10–15 seconds. Avoid constant stirring — aim for gentle, rhythmic folding so curds remain creamy.

When the eggs are mostly set but still slightly glossy and a bit underdone (about 1–2 minutes depending on heat and pan), remove the pan from heat. The residual heat will finish cooking. Taste and adjust seasoning with a little more salt and pepper if needed.

Stir in chopped cilantro (if using) and drizzle the optional 1/2 tsp olive oil over the eggs for a sheen and flavor. Gently fold to combine.

Toast bread & serve

While the eggs finish, toast the french bread: place slices or halved baguette under a broiler for 1–2 minutes per side until lightly golden, or toast in a toaster oven or skillet with a little butter for 1–2 minutes per side.

If desired, sprinkle 1/4 tsp salt lightly over the cut bread before serving to enhance flavor.

Plate portions of scrambled eggs alongside toasted french bread. Serve immediately while the eggs are hot.
