Strawberry Shake

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

Select ripe Grenache, Syrah, and Cinsault grapes from Barsotti Vineyard ensuring they are free from rot and blemishes.

Gently crush the selected grapes in a sanitized container to release their juice. Do not crush them too much to avoid bitter tannins.

Add the crushed grapes to a fermentation vessel. Sprinkle the packet of wine yeast over the grape mixture to initiate fermentation.

Dissolve the sugar in a small amount of filtered water and add it to the fermentation vessel. Add the sulfites to inhibit unwanted bacteria.

Cover the fermentation vessel with a cloth and allow the mixture to ferment at room temperature for about 7 to 10 days, stirring daily.

Once fermentation is complete, press the mixture to separate the liquid from the solids. Collect the liquid in a clean container.

Allow the pressed liquid to clarify for another week in a cool place, then siphon off the clear liquid into a clean bottle.

Bottle the clarified rosé using sterilized bottles, leaving some space at the top. Seal with corks.

Age the bottled rosé in a cool, dark place for at least 3 months before tasting to allow flavors to develop.
