Preparation of Baby Potatoes

Boil the Potatoes

In a medium pot, place the baby potatoes and cover them with cold water. Add a pinch of sea salt and bring to a boil over high heat. Once boiling, reduce heat to medium and let simmer for about 15-20 minutes or until tender when pierced with a fork.

Once cooked, drain the potatoes and let them cool slightly. When cool enough to handle, cut them in half lengthwise and place on a serving platter.

On the serving platter, place the 1 oz of osetra caviar in the center of the plate, allowing guests to serve themselves.

In a small bowl, combine the crème fraîche and finely chopped chives. Place this bowl next to the caviar along with the baby potatoes and lemon wedges for a refreshing touch.
