Adding Yeast

Cover the fermentation vessel with a clean cloth and let it ferment at a temperature of around 18-22°C (64-72°F) for about 5-7 days. Stir daily to ensure even fermentation.

Fermentation Process

After fermentation, siphon the wine off the sediment (lees) into a clean vessel, leaving the sediment behind.

Racking

If desired, add sulfur dioxide to the wine to help preserve it. This is particularly important if you plan to age the wine.

Optional Sulfur Dioxide Addition

Let the wine age in a cool, dark place for at least 6 months. This will help develop the flavors characteristic of Chardonnay.

Aging

Once aged, siphon the wine into sterilized bottles, leaving some space at the top. Seal with corks and label them.

Bottling

Chill the wine before serving and enjoy it with light dishes such as seafood, poultry, or creamy pasta.
