Prepare Salmon Patty

In a bowl, flake the cooked salmon fillet. Add breadcrumbs, one egg, lemon juice, dill, salt, and black pepper. Mix until combined and form into 4 patties.

Cook Salmon Patties

Heat a skillet over medium heat and add 1 tablespoon of butter. Cook the salmon patties for about 4-5 minutes on each side until golden brown and cooked through.

Sauté Spinach

In the same skillet, add the remaining butter. Sauté spinach until wilted. Season with salt and pepper. Remove from heat and set aside.

Make Poached Eggs

Bring a pot of water to a simmer and add the white vinegar. Crack each egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

Prepare Chipotle Hollandaise

In a heatproof bowl, whisk together egg yolks, chipotle in adobo sauce, and a squeeze of lemon juice. Place over a pot of simmering water and whisk continuously while slowly adding melted butter until the sauce is thickened. Season with salt.

Assemble Salmon Benedict

On each plate, place a salmon patty, top with sautéed spinach, then a poached egg, and drizzle with chipotle hollandaise. Serve immediately.
