Marinate the Chicken Wings
In a large bowl, combine minced garlic, Italian seasoning, olive oil, salt, and black pepper. Add the chicken wings and toss until they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight.

Preheat the Grill
Preheat your wood-fired grill to medium-high heat.

Cook the Wings
Remove the wings from the marinade and place them on the grill. Cook for about 20-25 minutes, turning occasionally, until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Serve
Remove the wings from the grill and let them rest for a few minutes before serving. Enjoy with your choice of buffalo sauce, whiskey glaze, or bees wing sauce, along with parmesan peppercorn dipping sauce.
