Lemon Cake Layers

    Prepare and bake cake layers

    Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans. In a large bowl whisk together flour, sugar, baking powder, and salt until evenly combined.

    In a separate bowl, cream the softened butter until smooth. Add eggs one at a time, beating briefly after each addition. Mix in vanilla extract, lemon zest and lemon juice.

    Alternately add the dry ingredients and milk to the butter-egg mixture in three additions, beginning and ending with the dry ingredients. Mix until just combined — do not overmix.

    Divide batter evenly between the prepared pans. Smooth the tops and bake for 22–28 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in pans for 10 minutes, then invert onto wire racks to cool completely.

    When cool, if needed, level the tops with a serrated knife so layers are flat for stacking.

Sweet Lemon Cream Filling

    Make lemon cream

    In a chilled mixing bowl, whip the heavy cream to soft peaks using a hand or stand mixer. Set aside.

    In another bowl, beat the softened cream cheese with powdered sugar, lemon juice and lemon zest until smooth and no lumps remain. Fold the whipped cream gently into the cream cheese mixture until uniform and light. Fold in the lemon curd until streaks disappear, keeping the filling airy.

    Taste and adjust sweetness or lemon intensity with additional powdered sugar or lemon juice if desired.

Fruit & Gelatin Layer

    Prepare fruit and gelatin

    Slice larger fruits (strawberries, kiwi, mango) into bite-sized pieces. Keep blueberries whole. Measure about 3 cups of mixed fruit.

    Sprinkle the unflavored gelatin over 1/4 cup cold water in a small bowl and let bloom for 5 minutes.

    In a separate small saucepan, combine hot water, sugar and lemon juice for the gelatin. Stir until sugar dissolves and the liquid is hot (do not boil). Add the bloomed gelatin and whisk until completely dissolved. Let cool to lukewarm but not set.

    Gently fold the fruit into the cooled gelatin syrup so pieces are lightly coated — do not macerate the fruit. Refrigerate the mixture briefly (5–10 minutes) until it begins to thicken slightly but is still pourable.

Assembly & Finishing

    Syrup

    If using simple syrup: warm simple syrup and stir in 2 tbs fresh lemon juice. Allow to cool slightly. This will be brushed onto cake layers to keep them moist and add lemon flavor.

    Place one cooled cake layer on a serving plate or cake board. Brush the top generously with about half of the lemon simple syrup (about 2–3 tbs) to moisten the crumb.

    Spread about half of the sweet lemon cream evenly over the first layer, smoothing to the edges.

    Spoon the lightly gelatin-coated fruit evenly over the cream, leaving a small border so the next cake layer can adhere. If desired, reserve a handful of fruit for garnish.

    Carefully place the second cake layer on top. Brush the top with remaining syrup. Use the remaining lemon cream to cover the top and sides of the cake, smoothing with an offset spatula for a clean finish.

    Refrigerate the assembled cake for at least 2 hours (preferably 4 hours or overnight) so the gelatin sets and layers firm up. This chilling also improves sliceability.

    Before serving, garnish the top with the reserved fresh fruit, a light dusting of powdered sugar if desired, and mint leaves. Slice with a sharp knife dipped in hot water and wiped dry between cuts for neat slices.
