Base Espresso

Pull and dilute
Pull two standard espresso shots (about 2 oz combined). Immediately pour into a preheated 10–12 oz cup. Add 2 oz hot water if you prefer a slightly larger, smoother base (Americano-style). Keep cup warm.
Blue Ternate Syrup

Steep butterfly pea
Place 1 tablespoon dried butterfly pea flowers into a heatproof container. Pour 4 oz freshly boiled water over the flowers. Steep for 5 minutes until deep blue. Strain through a fine sieve into a small saucepan, pressing gently to extract color and flavor; discard solids.

Sweeten and brighten
Over medium-low heat, add 2 tablespoons granulated sugar to the strained infusion and stir until fully dissolved (about 1–2 minutes). Remove from heat and stir in 1 teaspoon fresh lime juice to brighten flavor and help set the syrup. Let cool slightly — you should have roughly 3–4 oz of vibrant blue syrup. Taste and adjust sugar or lime to preference.

Heat and texture milk
Combine 6 oz whole milk and 1/2 tablespoon vanilla syrup in a steaming pitcher. Steam until milk reaches 140–150°F (60–65°C) and microfoam forms, or heat on stovetop to 140°F and texture with a handheld frother until silky microfoam is achieved. Aim for velvety, glossy foam with small bubbles.

Layering
Pour 1.5–2 oz of the blue Ternate syrup into the bottom of the warmed cup that holds the espresso. Gently pour the espresso over the syrup so it layers above the syrup. Slowly pour the steamed milk into the cup over the back of a spoon or down the center to create a soft layered effect; allow a bit of foam to settle on top.

Finish with a light sprinkle (about 1/4 tsp) of edible dried butterfly pea petals or a few micro mint leaves atop the foam and place a lime wheel on the cup rim. Optionally, for a color-shifting effect, instruct the guest to squeeze the lime wheel into the drink — the added acid will turn the blue syrup to a purple hue.
