Peach Tea Honey Syrup (makes ~8 oz)

Peach Tea Honey Syrup
Brew tea
Brew 1 cup of strong peach tea (use 1-2 tea bags or loose leaf equivalent) and let it cool to warm or room temperature. Straining is optional if using loose leaf.
Combine with honey
While the tea is still warm (not boiling), add 1/2 cup honey and whisk until fully dissolved. If syrup is too thick once cooled, stir in up to 1/4 cup warm water until pourable. Let syrup cool completely before using.
Store leftover syrup in a sealed container in the refrigerator for up to 2 weeks.
Cocktail Assembly
Add 2 oz Russell's Reserve bourbon, 0.75 oz peach tea honey syrup, and 0.75 oz fresh lemon juice to a cocktail shaker.
Fill the shaker with ice and shake vigorously for about 12-15 seconds, until the outside of the shaker is very cold.
Strain the cocktail into a rocks glass over one large ice cube or into a chilled coupe depending on preference.
Garnish with a lemon wheel or wedge and a fresh peach slice if using. Serve immediately.
