Prepare and combine

Chill a coupe or Nick & Nora glass by placing it in the freezer or filling with ice water while you work. Fill a cocktail shaker with ice. Add 2 oz dry gin, 0.5 oz Aperol, 0.75 oz freshly squeezed lemon juice, 0.5 oz simple syrup, and 2 dashes orange bitters to the shaker.

Shake

Secure the shaker lid and shake vigorously for 12–15 seconds, until the shaker is well chilled and you see condensation form. This both chills and dilutes the mix to balance flavors.

Double strain

Discard ice or water from the chilled glass. Using a Hawthorne strainer and a fine mesh strainer, double-strain the shaken cocktail into the chilled coupe, leaving room for the sparkling wine on top (about 1/2 to 3/4 inch from the rim).

Top with sparkling wine

Gently pour 2 oz dry sparkling wine down the side of the glass or over the back of a bar spoon to preserve effervescence and create a light, luminous layer. Do not stir.

Garnish and serve

Express an orange twist over the drink by holding the peel about 2–3 inches above the surface and giving it a firm snap to release the oils; run the peel around the glass rim and drop it into the cocktail. Serve immediately while fizzy.

Ice

Use fresh ice for shaking and keep the serving glass chilled. If you used ice water to chill the glass, be sure to pour it out completely before straining the cocktail in.
