Brew 1.5 cups very strong black tea (assam or hojicha) or make espresso; allow to cool slightly so it remains warm but not hot.
In a small saucepan, combine the warm tea/espresso, 2 tablespoons sugar, 1 tablespoon mirin (or sweetened sake), 1/2 teaspoon dark soy, and an optional 1/8 teaspoon toasted sesame oil. Heat gently while stirring until sugar dissolves; remove from heat and let cool to room temperature. Taste and adjust balance: it should be sweet with a subtle savory note.
Mascarpone-style Asian Cream
Chill a medium mixing bowl and beaters for the whipped cream step (optional but helps). In a separate bowl, sift 1 teaspoon matcha powder with a small pinch of sugar to remove lumps.
In a large bowl, combine 8 oz mascarpone and 4 oz softened cream cheese. Whisk gently until smooth and no lumps remain. Add 1 teaspoon vanilla and 1 teaspoon yuzu juice; mix to combine. Do not over-whisk to avoid thinning the cheese.
In the chilled bowl, whip 3/4 cup cold heavy cream with 2 teaspoons granulated sugar until soft peaks form. Fold about two-thirds of the whipped cream into the mascarpone–cream cheese mixture in two additions, folding gently to keep it airy. Reserve the remaining whipped cream for lightening the top layer.
Take about 1/3 of the combined cream mixture into a small bowl and stir in the sifted matcha to create a pale green matcha cream for swirling; keep the remainder plain.
Stir 1/4 cup sweetened condensed milk into the main cream mixture to add Asian-style sweetness and silkiness; fold gently to incorporate.
Assembling the Asian Tiramisu
Prepare an 8x8-inch (or similar) shallow dish. Quickly dip each ladyfinger for 1–2 seconds per side into the cooled tea/mirin syrup — do not over-soak or they will fall apart. Arrange a single layer (about 9 ladyfingers) to cover the bottom.
Spread about half of the plain mascarpone mixture evenly over the soaked ladyfingers (about 3/4–1 cup). Sprinkle half of the crushed senbei (or 1/4 cup if using) and a few toasted sesame seeds and a light dusting (1/2 teaspoon) of matcha for a textural and savory contrast.
Arrange a second quick-dipped layer of the remaining 9 ladyfingers on top of the cream. Gently press to level.
Spread the remaining plain cream across this second layer, then dollop and gently swirl the matcha-tinted cream across the top to create marbled pockets of green. Use a spatula to smooth lightly.
Sprinkle the top with the remaining crushed senbei, toasted sesame seeds, and shaved kurozaoto or dark muscovado to introduce deep caramel notes.
Cover the dish with plastic wrap and chill in the refrigerator at least 6 hours, preferably overnight, so flavors meld and texture firms.
Finishing & Serving
About 10–15 minutes before serving, sift 1 tablespoon matcha powder over the top of the tiramisu for a final green finish; add extra shaved dark sugar or toasted sesame seeds if desired.
Slice into squares with a hot, dry knife (wipe between cuts for clean edges) and serve chilled. Leftovers keep tightly covered in the refrigerator up to 3 days.
