Mix and form patties

Place ground beef in a large bowl. Add kosher salt, black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands or a spoon until just combined—do not overwork. Divide mixture into 6 equal portions (about 5.3 oz / 150 g each). Form each portion into a patty about 3/4 inch thick, make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Preheat and oil

Preheat a grill or heavy skillet (cast-iron preferred) over medium-high heat until very hot (about 5 minutes). Lightly brush the cooking surface with vegetable oil to prevent sticking.

Cook patties

Place patties on the hot grill or skillet, leaving space between them. Cook without moving for 3-4 minutes until a brown crust forms. Flip once and cook 2-3 minutes more for medium (internal temperature ~145-150°F / 63-66°C). In the last minute of cooking, place a slice of cheddar on each patty and close the grill lid or cover skillet briefly to melt the cheese. Remove patties and rest for 2 minutes.

Prepare produce and buns

While patties cook, wash and dry lettuce leaves. Slice tomato into 6 even slices (about 1/4" each). Separate onion into thin rings. Split the brioche buns and spread butter on cut sides. Toast buns cut-side down in a clean skillet over medium heat until golden, about 1-2 minutes.

Assemble burgers

Spread 1 tablespoon mayonnaise on each bottom bun and 1/2 tablespoon yellow mustard on each top bun (adjust to taste). Place a lettuce leaf on each bottom bun, add a tomato slice, then a cheesy burger patty. Top patties with 2 pickle slices and a few onion rings. Cap with the top bun and press gently to set.

Serve

Arrange assembled burgers on a platter and serve immediately while hot with extra pickles and optional fries or salad.

Make burger sauce

In a small bowl, whisk together ketchup, extra mayonnaise, sweet pickle relish, and paprika until smooth. Taste and adjust seasoning. Spoon 1 tablespoon of sauce onto the bottom bun in place of or in addition to plain mayonnaise for a tangy finish.
