Po’Boy Preparation
Prepare the Shrimp
In a mixing bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper. Dip each shrimp into the buttermilk, then coat in the flour mixture.
Fry the Shrimp
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the coated shrimp and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Assemble the Po’Boy
Slice the French baguette lengthwise, leaving one side attached. Layer with shredded lettuce, fried shrimp, sliced tomato, pickles, and a generous drizzle of remoulade sauce.
Serve
Cut the sandwich in half and serve immediately with extra remoulade sauce on the side.
