A juicy hop forward ale. Clouded in appearance, medium in body and rich in texture. Generous additions of bright, exotic hops that conjure a deluge of melon, tangerine and citrus. Layered within grassy bitterness that recedes with each sip.

Heat 5.5 gallons (approx.) of mash water to about 166°F (to reach a target mash temperature of 152°F when grains are added). If using water salts, dissolve gypsum and calcium chloride in the strike water before heating.

Heat strike water

Add crushed Pale 2-Row, Wheat, Vienna, flaked oats and CaraPils to mash tun. Stir thoroughly to eliminate dry pockets and dough balls.

Stir and stabilize mash at 152°F. Hold mash for 60 minutes, gently stirring or recirculating (vorlauf) after 10-15 minutes until wort runs clear.

Perform mashout: raise temperature to 168°F and hold 10 minutes to stop enzymatic activity.

Sparge the grains with enough 170-175°F water to collect roughly 6.5-6.75 gallons of wort in the kettle (accounting for boil-off).

Bring wort to a vigorous boil. This recipe uses a relatively low bittering profile, so there is no high-alpha hop addition at 60 minutes. Begin a 60-minute boil at the point of first vigorous rolling boil.

At 15 minutes left in the boil, add 1.5 oz Mosaic, 1 oz Azacca, 1 oz Citra and 1 oz Nelson Sauvin. Add Irish Moss or Whirlfloc at 10-15 minutes if desired to improve clarity. This late hopping builds flavor and aroma without extracting heavy bitterness.

Late boil hop additions

At the end of the 60-minute boil, cool the wort quickly (preferably with a wort chiller) to around 68°F for transfer to the fermenter.

Transfer cooled wort to a sanitized fermenter, leaving trub behind. Top up with water to achieve 5.25 gallons total if needed (target batch size 5 gallons).

Aerate vigorously by shaking, splashing, or using an oxygen source. Pitch the New England / East Coast ale yeast at 65-68°F (ale pitch temperature).

Ferment at 66-70°F for primary fermentation. Expect active fermentation within 24-48 hours. Maintain a stable temperature (typically 66-68°F for a clean ester profile). Primary for 4 days or until vigorous fermentation subsides.

On day 4 (near end of active fermentation but with some CO2 activity), add dry hop additions: 1.5 oz Mosaic, 1 oz Azacca, 1 oz Citra, 1 oz Nelson Sauvin directly to the fermenter. Allow 3-4 days contact for maximum aroma and minimal grassy bitterness. Avoid extended dry hop beyond 5 days to reduce grassy/herbal extraction.

Dry hop schedule

After dry hopping (day 7-8), cold crash to 38-45°F for 24-48 hours to help flocculate yeast and hop particles, improving clarity while retaining haze characteristic.

Rack beer to a bottling bucket or keg. If bottling, dissolve 3.5 oz corn sugar in 8 oz boiling water, cool, and add to sanitized bottling bucket before racking beer on top to ensure even priming. Bottle and cap.

Condition bottles at 68-72°F for 10-14 days to carbonate. If kegging, force carbonate to 10-12 psi at serving temperature.

Serve slightly hazy chilled (45-50°F in a glass) to highlight juicy, hop-forward aromatics of melon, tangerine and citrus with a medium body and soft mouthfeel.
