Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

If not already cooked, grill or roast the chicken breast until cooked through. Allow it to cool and then chop into bite-sized pieces.

Place eggs in a pot, cover with cold water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 12 minutes, then cool in ice water.

In a large bowl, combine the mixed greens, chopped chicken, diced avocado, crumbled blue cheese, halved cherry tomatoes, and sliced red onion.

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
