Prepare the Wontons

Heat oil in a deep pan over medium heat. Fry the wonton wrappers until golden brown and crispy, about 2-3 minutes. Remove and place on paper towels to drain excess oil.

Cook the Udon Noodles

In a separate pot, boil water and cook the udon noodles according to package instructions. Drain and set aside.

Sauté the Vegetables

In a large skillet, heat a bit of oil over medium heat. Add the sliced red onion, wild mushrooms, snap peas, and baby bok choy. Sauté until the vegetables are tender, about 5-7 minutes.

Make the Gochujang Sauce

In a small bowl, mix together gochujang, soy sauce, honey, rice vinegar, and sesame oil until well combined.

In serving bowls, add a portion of udon noodles, top with sautéed vegetables, drizzle with gochujang sauce, and garnish with fried wontons.
