Winemaking Process
1. Harvesting
Hand-pick the Tempranillo grapes at their peak ripeness, typically in late September to early October.
2. Crushing and Destemming
Crush and destem the grapes, placing them into a fermentation vessel.
3. Fermentation
Add yeast to the crushed grapes and allow fermentation to occur for about 7-10 days at a controlled temperature of 20-25°C (68-77°F).
4. Pressing
After fermentation, press the grape skins to extract the wine. Transfer the liquid to a clean fermentation vessel.
5. Malolactic Fermentation
Add malolactic bacteria to the wine to convert malic acid into lactic acid, softening the wine's taste.
6. Aging
Age the wine in oak barrels or with oak chips for 6-12 months to develop flavor complexity.
7. Bottling
After aging, filter and bottle the wine, adding sulfites to stabilize it.
8. Enjoy
Let the wine rest in the bottle for a few months before enjoying it with food or on its own.
