Prepare the Fries

Wash and cut the Russet potatoes into fry shapes. Rinse in cold water and soak for at least 30 minutes. Drain and pat dry.

Fry the Potatoes

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Cook the Bacon

In a skillet, cook the bacon over medium heat until crispy. Remove from pan, drain on paper towels, and crumble into pieces.

Make the Cheese Sauce

In a saucepan, combine shredded cheddar cheese, milk, hot sauce, and salt. Heat over low-medium heat, stirring until the cheese is melted and the sauce is smooth.

Prepare the Lime Crema

In a small bowl, mix together sour cream, lime juice, and a pinch of salt until smooth.

Assemble the Loaded Fries

On a serving platter, place a generous layer of fries. Drizzle with spicy cheese sauce, and top with crumbled bacon, diced tomatoes, and chopped green onions. Finally, drizzle with lime crema.
