Method
Taco Preparation
Cook the Chorizo
In a skillet over medium heat, cook the chorizo until it is browned and cooked through, about 5-7 minutes. Set aside.
Prepare the Slaw
In a large bowl, combine napa cabbage, sundried tomatoes, grated carrot, cilantro, lime juice, olive oil, salt, and black pepper. Toss to mix well and set aside.
Make the Horseradish Sour Cream
In a small bowl, mix together sour cream, horseradish, lemon juice, and salt. Stir until well combined.
Fry the Jalapenos
In a frying pan, heat vegetable oil over medium-high heat. Dip sliced jalapenos in buttermilk, then coat in cornmeal. Fry until golden brown, about 3-4 minutes. Drain on paper towels.
Assemble the Tacos
Warm the corn tortillas in a dry skillet. Layer with chorizo, napa sundried tomato slaw, a dollop of horseradish sour cream, and crispy fried jalapenos.
