Cook the macaroni

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Cook the bacon

In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet, crumble, and set aside, leaving the rendered bacon fat in the skillet.

Make the cheese sauce

In the same skillet with the bacon fat, melt the butter over medium heat. Stir in the flour and cook for 1 minute, until lightly golden. Gradually whisk in the milk, ensuring there are no lumps. Cook until the sauce thickens, about 5 minutes.

Reduce heat to low and stir in the cheddar cheese and cream cheese until melted and smooth. Season with salt, black pepper, and garlic powder.

Add the cooked macaroni and crumbled bacon to the cheese sauce, stirring until everything is well coated.
