BBQ Chicken

Prepare the Chicken

In a large bowl, combine olive oil, paprika, garlic powder, onion powder, salt, and black pepper. Add chicken legs and thighs to the bowl and coat them well with the marinade. Let marinate for at least 30 minutes.

Grill the Chicken

Preheat your grill to medium-high heat. Place the marinated chicken on the grill and cook for about 20-25 minutes, turning occasionally. Brush with BBQ sauce during the last 5 minutes of cooking.

Cook the Pasta

In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt butter over medium heat. Stir in flour and cook for about 1 minute. Gradually whisk in milk, stirring constantly until thickened. Add shredded cheddar cheese, salt, and pepper. Stir until smooth.

Combine

Add the cooked macaroni to the cheese sauce and mix until well combined.

Slaw

Mix the Slaw

In a large bowl, combine shredded cabbage and carrot. In a separate bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine.

Street Corn

Grill the Corn

Preheat the grill to medium heat. Grill corn on the cob for about 10-15 minutes, turning occasionally until charred.

Prepare the Topping

In a bowl, mix mayonnaise, crumbled Cotija cheese, chili powder, and lime juice. Brush this mixture over the grilled corn before serving.
