Preparation of Fish

Smoke the Fish

Preheat your smoker to 200°F (93°C). Season the fish fillets with salt and black pepper. Place them in the smoker and smoke for about 30-40 minutes or until the fish is cooked through and flaky.

Prepare the Vegetables

While the fish is smoking, wash and chop the bok choy, Hakurei turnips, and radishes. Slice the cucumber into thin rounds.

Chimichurri and Garlic Lemon Oil

Make Chimichurri

In a food processor, combine the cilantro, garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Garlic Lemon Oil

In a small saucepan, gently heat olive oil and add minced garlic. Cook until the garlic is fragrant but not browned. Add lemon juice and stir to combine.

Assembly

Plate the Dish

On a serving plate, arrange the smoked fish alongside the prepared bok choy, turnips, radishes, and cucumber. Drizzle with garlic lemon oil and top with cilantro chimichurri.
