    prepare wrappers

    Lightly dust a clean work surface with 1–2 teaspoons cornstarch to prevent sticking. Arrange 24 wonton wrappers in a single layer covered with a damp towel so they don't dry out as you work.

    Have 3 teaspoons water in a small bowl for sealing edges. Keep a small plate nearby for finished dumplings. Work with one wrapper at a time.

    clean and prepare morels

    If using fresh morels, rinse briefly under cold water to remove grit, then pat dry on paper towels. Slice larger morels in half lengthwise and chop coarsely so final pieces are small enough to fit inside wrappers. If using dried morels, rehydrate in warm water for 20–30 minutes, drain well, reserve 1–2 tbs soaking liquid (strain), and chop.

    Heat 2 teaspoons neutral oil in a medium skillet over medium heat. Add the minced shallot and garlic and cook 1–2 minutes until fragrant and translucent. Add the chopped morels and sauté 3–4 minutes, stirring, until they release moisture and begin to darken. If you rehydrated dried morels, add 1 teaspoon of the reserved soaking liquid while cooking to boost flavor. Remove from heat and let the mushrooms cool about 5 minutes.

    prepare spinach

    While mushrooms cool, blanch the chopped spinach in boiling water for 15–20 seconds until wilted, then transfer immediately to ice water to stop cooking. Squeeze out all excess moisture using your hands or a clean towel (important: remove as much water as possible). Finely chop the drained spinach.

    In a mixing bowl combine the cooled morels, squeezed chopped spinach, 1 teaspoon cornstarch, 1 teaspoon sesame oil, 1 teaspoon white pepper, 1 teaspoon fine sea salt, 1 tablespoon light soy sauce, 1 teaspoon rice wine, and the beaten egg white. Mix thoroughly until the mixture is cohesive and slightly sticky — this helps it hold together inside the wrapper. Taste and adjust seasoning if desired.

    Place a wrapper on the dusted surface. Spoon about 1 heaping teaspoon (roughly 10–12 g) of filling into the center of each wrapper. Do not overfill; leaving a 3–4 mm border helps seal cleanly.

    Dip your finger into the sealing water and moisten the wrapper edge lightly. Fold the wrapper over the filling to form a half-moon and press gently to remove air. For a 'crystal' appearance (thin, translucent edge), press edges flat and pleat tightly in small folds or simply press with the tines of a fork for a decorative seal. Ensure there are no open seams. Place finished dumplings on the prepared plate, spaced so they don't touch.

Cooking & finishing

    steam dumplings

    Bring 500 ml water to a simmer in a wok or large saucepan fitted with a steamer basket or bamboo steamer. Line steamer with parchment paper with small perforations or cabbage leaves to prevent sticking. Arrange dumplings in a single layer leaving space between them. Cover and steam over simmering water for 6–8 minutes, until wrappers become translucent and filling is hot through (internal temperature ~70–75°C). If wrappers are thicker, add 1–2 minutes.

    Carefully transfer steamed dumplings to a serving plate. Lightly brush or drizzle with 1 teaspoon sesame oil if desired and sprinkle 1 teaspoon toasted sesame seeds for texture and visual contrast.

Dipping sauce (optional)

    Whisk together 2 tablespoons light soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, finely sliced scallion, and (optional) 1 teaspoon chili oil. Adjust to taste. Serve alongside the warm crystal dumplings.
