Prepare the Marinade

In a bowl, combine minced garlic, soy sauce, honey, rice vinegar, and sesame oil. Mix well.

Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes.

Cook the Noodles

In a large pot of boiling water, cook the yakisoba noodles according to package instructions. Drain and set aside.

Sauté the Vegetables

In a large skillet over medium heat, add a splash of sesame oil. Add sugar snap peas and julienned carrots, sautéing until tender, about 3-4 minutes.

Grill the Salmon

Preheat a grill or grill pan over medium-high heat. Remove salmon from marinade (reserve marinade) and grill for about 4-5 minutes per side, brushing with reserved marinade, until cooked through.

Combine Noodles and Vegetables

Add cooked yakisoba noodles to the skillet with the sautéed vegetables and toss to combine. Cook for an additional 2 minutes.

Plate the yakisoba noodles and vegetables. Top with grilled salmon, arugula, chopped green onions, and sprinkle with toasted sesame seeds. Serve with grilled lemon halves.
