In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté until fragrant, about 1-2 minutes.

Add Miso and Broth

Stir in the miso paste until dissolved, then add the vegetable broth and soy sauce. Bring to a simmer and add red pepper flakes for spice.

Cook the Noodles

Add the ramen noodles to the simmering broth and cook according to package instructions, usually about 4-5 minutes.

Fry the Eggs

While the noodles are cooking, heat a non-stick skillet over medium heat. Fry the eggs sunny-side up until the whites are set but the yolks are still runny.

Assemble the Ramen

Once the noodles are cooked, divide them into serving bowls. Ladle the spicy miso broth over the noodles and top with chopped green onions, bean sprouts, kimchi, and the fried egg.
