Directions
Prepare the Noodles
Boil a pot of water and cook the rice noodles according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Protein
Cook your choice of protein (chicken, tofu, shrimp, etc.) by grilling, sautéing, or boiling until fully cooked. Let it cool, then slice it into bite-sized pieces.
Chop the Vegetables
Slice the cucumber, bell pepper, and green onions. Trim the ends of the sugar snap peas. Set all the vegetables aside.
Assemble the Bowl
In a large bowl, combine the cooked rice noodles, protein, sugar snap peas, sliced cucumber, bell pepper, green onions, cilantro, and mint.
Dress the Salad
Drizzle the sweet soy ginger dressing over the assembled bowl and toss gently to combine all ingredients.
Serve
Garnish with peanuts and black sesame seeds. Serve cold and enjoy your Cold Thai Noodle Bowl!
