Prepare the Noodles

Boil a pot of water and cook the rice noodles according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Protein

Cook your choice of protein (chicken, tofu, shrimp, etc.) by grilling, sautéing, or boiling until fully cooked. Let it cool, then slice it into bite-sized pieces.

Chop the Vegetables

Slice the cucumber, bell pepper, and green onions. Trim the ends of the sugar snap peas. Set all the vegetables aside.
