Prepare the Pork Belly

Marinate the pork belly with grated ginger, salt, and pepper. Let it sit for at least 30 minutes.

Cook the Pork Belly

Preheat the oven to 300°F (150°C). Place the marinated pork belly in a baking dish and cover with foil. Bake for 2 hours until tender. Remove from the oven and let it rest before slicing.

Prepare the Sesame Mayo

In a bowl, mix mayonnaise with sesame oil until well combined. Adjust seasoning as needed.

Assemble the Banh Mi

Slice the baguette in half and spread a generous amount of sesame mayo on both sides. Layer the sliced pork belly, pickled red onion, carrot, jalapeño, cucumber, and cilantro.

Serve the Banh Mi with shoestring fries or sweet potato fries on the side.
